Healthy Yogurt Parfaits

This is a perfect, balanced breakfast or snack that can be prepped ahead of time or thrown together on the spot. Making your own granola is a clean way to add crunch and flavor without the added fat and additives. It’s so easy!
Ingredients:
Parfait:
1 C Plain Greek Yogurt
1 C mixed berries
1 C Granola, store bought, or use recipe below
Granola:
4.5 C old fashioned rolled oats – not quick cooking or steel cut
½ C sunflower seeds
1 C unsweetened flaked coconut
1/3 C flax seeds
1/3 C butter
1/3 C brown sugar
1/3 C agave nectar
½ tsp salt
1.5 tsp vanilla extract
¾ tsp baking soda
Instructions:
- Make Granola.
- Heat oven to 325 and line a large cookie sheet with parchment paper or spray with cooking spray.
- Mix dry ingredients in a large bowl.
- Make syrup by adding butter to a large saucepan over med heat, stir in brown sugar, agave nectar, and salt. Bring to a boil, remove from heat, and stir in baking soda and vanilla.
- Pour syrup over the dry oat mixture and mix until everything in evenly coated.
- Spread onto the prepared pan and bake for 8 minutes.
- Remove from oven and toss, then gently press down on granola with your spatula to flatten. Bake for another 8-10 minutes until golden brown.
- Remove pan and use the back of a metal spatula to press the hot granola firmly down into the pan. Allow granola to cool completely and then stir and break up for clusters that stick together.
- Assemble parfait.
- Add ½ C yogurt to two mason jars.
- Layer ½ C mixed berries.
- Top with ½ C granola.
- Mix and enjoy!
